Stefan is a qualified baker- and pastry-chef specialized in high-quality baked patisserie. You can eat his handmade delicacies without any regrets: less fat, less sugar, more taste. He love to try out, invent and has a loooooooot of ideas.

Stefan grew up in Flawil, he did his apprenticeship as a bread-and cake-maker, dedicated himself to his love the skateboard he worked for some years as a salesman in a local streetwear and skateboard store (Beach Mountain). He studied in various cities and different restaurants, meet his wife Claudia, traveled together around the world and found at some point the enthusiasm for his job again.

In January 2012 Stefan and his wife Claudia opened their store called «g’nuss» and fullfilled their dream by having their own store. Gnuss means in German something like enjoyment or pleasure. And that’s what you feel, when you bite into one of his sweet creations.

Stefan has acquired his knowledge and ability in the past few years. He is very innovative and try out different approaches. One important thing is, that all ingredients are, if possible, locally supplied, or from fair trade. That’s why his innovative and healthy creations are more expensive than those in the supermarket. Some of his creations are even vegan!

«Rethinking demands courage – but courage is usually rewarded.»

Every Easter, he makes his own silicone moulds in different shapes of Easter bunnies (Osterhasen). Melted chocolate is poured into this moulds, allowed to cool and to solidify, before being removed from the mould and then filled with chocolate or cream.

In conclusion it’s not really possible do describe how extremely tasty his divine creations are… you simply have to try it. TIPP: Try the «Tropical»: Coconut, mango and passion fruit. Modest in fat and sugar-generous in taste. And by the way, he makes delicious cakes on request too!
